Here is a quick recipe that you can make for guests or take to a party!

Serves 4
  • 12 small sweet or mildly hot bell peppers of different color (in some supermarkets they have them pre packaged)
  • 4 ounces goat cheese log
  • Zest of one lemon
  • Fresh cracked pepper
  • Red pepper flakes
Mix the zest, red pepper flakes and pepper with the goat cheese.  Mix well with a fork.
Cut the tops off of peppers and scoop out any seeds.
Using a spoon stuff the goat cheese mixture in the the pepper.
If you would like replace the top of the pepper.
Arrange the peppers on a cookie sheet and place in a preheated 350F oven for 15-20 minutes. About halfway through turn the peppers with a tongs so that both sides become nice and brown.
Place on a platter, tuck in and enjoy!
